"Produced using the traditional method found in Champagne, Dopff and Irion use a blend of 50% Pinot Blanc and 50% Auxerrois to create a base wine that they mature in vats for about 6 months before bottling with a tirage liqueur to induce a secondary fermentation and the creation of the fizz. Following a maturation for a further 12 to 15 months the bottles are disgorged and prepared for market with the addition of a final touch of sugar to produce Crémants with a dry and elegant style."
Dopff & Irion produce thier wines from 27 hectares of vines within the district of Riquewihr. The climate allows the grapes ripen slowly, to the west, the Vosges mountains keep westerly rains away, whilst to the north, the famous Schoenenbourg hill protects the vineyards from cold north winds.
