It has notes of elderflower, acacia honey and soft toasted hazelnut as well as flavours of green apple and citrus fruits. This would definitely be a great apéritif wine but as it has a gourmet feel it would work excellently with food and pair well with salmon, prawns or any fresh fish dishes"
Limoux in the Languedoc region of southern France claims to be the oldest sparkling wine region in the world with the Benedictine monks of St Hilaire Abbey commencing production of Blanquette de Limoux in 1531. Legend has it that Dom Pérignon travelled during a pilgrimage to the Saint-Hilaire abbey - on the way to Santiago de Compostela in northern Spain - and discovered the process of sparkling wines there. On return to his abbey of Saint-Pierre d’Hautvillers near Reims, he used the technique on local wines from the Champagne region with another monk, Dom Thiery Ruinart.

Established in 1946, the multi award-winning winery adopted the name Sieur d’Arques after a 16th century Lord who was renowned for his love of the sparkling wines of Limoux.
A blend of 60% Chardonnay, 20% Chenin and 20% Pinot Noir, the Crémant de Limoux Brut is slowly aged on lees between 12 and 15 months to develop characteristic toasted notes and a creamy texture whilst retaining a delicate freshness and acidity.
