Aldwick’s Pinot Noir grapes were meticulously hand harvested by the home team and loyal volunteers during the month of October. The best grapes were selected and delivered directly to the winery for pressing. The bunches of grapes were gently tipped into the press and under low pressure the juice extracted. This method gave the wine its softness and enabled us to attain the delicate pink colour we required. The juice started the 1st fermentation in stainless-steel tanks followed by fining and filtration before being bottled after 10 months. It then rested on ‘the Lees’. After two years the wine was disgorged, thus, creating this delightful sparkling wine for all to enjoy. Disgorged: July 2019
