"A deep translucent garnet red. Fine and charming, on notes of violets and peony, of bigarreau cherries, smoked bacon and a hint of warm slate. Straight, slender, with a fine and silky matter, but moreover a sensation of freshness and of digestibility. The same floral aromas detected by the nose are present, but also spices and smoke. The final taste is a subtle chewiness, with a fine bitterness and saltiness."
Grown in a Mediterranean climate in a vineyard on the foothills of the Massif Central. Typical of the future Roquebrun appellation The vines here a mix of Grenache, Carignan, Cinsault and a selection of Syrah pruned in Gobelet form. The rest of Syrah pruned in Royat form. Grapes are destemmed and partially trodden and fermentation is done without any artificial yeasts. The wine is kept only in tanks for the duration of fermentation and separated from the pressed grapes. The ine is matured on lees in full tank with "batonnage" .Malolactic is also done on lees and racked after malolactic keeping the fines lees, before being aged for the final few months on lees.
