Clean, delicate and faintly yeasty on the nose. Dry, light, crisp but tremendously complex on the palate. Classic notes of salted almonds and orange peel. Power and refreshment combine to create the most complex and cerebral Manzanilla.

Vineyard Information

Established in 1792, this family owned and run sherry house is now in its sixth generation, with Javier Hidlago in charge of what is widely regarded as the definitive Manzanilla house.

Extensive vineyard holdings ensure the best quality Palomino Fino is delivered from the bright albariza soils to the bodegas in Sanlúcar de Barrameda, where every step is taken during the long solera process to deliver excellence and consistency. Gradual biological ageing via the solera process under natural flor for Manzanilla and Amontillado produces dry, salty styles that are proving particularly popular in our ever evolving tapas-style culinary culture, where their ability to match such a diversity of ingredients is unrivaled and increasingly fashionable.

The single vineyard Pastrana originates from the Hidalgo family's vineyard in the Miraflores district. All the sherries have been aged in old American oak casks and have the typical freshness of this unique wine with a delicate notes of green apple and almonds indicating its exceptional style and quality.
