Stefano and his wife Nicoletta continue to “establish themselves as among the most promising young producers in Italy” (Robert Parker). They own 21 hectares of well-sited vineyards in the foothills of the Marcellise valley. Nearly all the wines here are made with a percentage of dried grapes. This does create quite a bit more work – essentially two harvests are made for each wine. The earlier harvest is left to dry and made with body and power in mind. The other is made to bring freshness. These are vinified separately and then combined in varying proportions until the right balance is achieved.
