"Mediterranean subtlety. Wine with a nice cherry color of light layer with great presence of aromas of fresh red fruit and perfect maturation has a strong aromatic character to Mediterranean forest faithfully showing its origin. With a jovial character, fresh and light in the mouth, it is long in the aftertaste and shows a great personality of its own. That’s Sofia, that’s her first red wine."
The Giró vineyard is located in the Sierra Umbría, at an altitude of between 600 and 700 meters above sea level. The soil in this plot is very poor and sandy, which limits the production per plant, resulting in small clusters with grapes of great quality, aromatic intensity and oenological potential. This variety, native to the area, is perfectly adapted to the Mediterranean environment, providing a unique and authentic character characterized by its thin skin and a natural acidity remarkable for the region, which allows it to retain a unique freshness. Although it is sensitive to diseases such as powdery mildew, its short vegetative cycle allows the grapes to reach their optimum ripening point before adverse weather conditions can affect the harvest. All these factors contribute to the creation of a balanced and rounded wine of limited production as it comes from a small plot of barely two hectares.
Vinification is carried out in September, first fermenting in stainless steel tanks from grapes kept for 24 hours in cold storage and fermenting at a low temperature, since Sofia’s objective is to extract all the fresh red fruit character that the variety offers. The wine is then aged in small porous concrete tanks for a short period of three months to maintain freshness. This delicate artisanal winemaking process allows us to highlight the characteristics of the variety and the vibrant character of the wine while maintaining a fresh and elegant profile and preserving the uniqueness of the grapes and the terroir where our vineyard is located.
