'Domaine Tollot-Beaut is perhaps the best-known grower in Chorey-lès-Beaune, though their more fruit-forward and 'juicy' style of wine tends to put off some Burgundy purists seeking more austere and mineral-driven wines. Personally, I have always thoroughly enjoyed Tollot-Beaut’s wines. Not everything has to be intellectual and challenging, not to mention that the wines tend to evolve more terroir attributes with bottle age - if you can resist temptation, because they are just delicious in their youth. A blend of two parcels, the largest of which used to be classified as Chorey-les-Beaune until the INAO changed the boundaries in 1986. The vines that produce the grapes for this Bourgogne Rouge were planted in 1963, 1970, 1975 and 1984. The wine is fermented in open vats with floating caps that are punched down daily. The wine is aged in French oak barrels, 25% of which are new oak. Deep colour, beautifully spicy nose. Ripe, opulent and fleshy.
