Didier Negron has been in charge of the winemaking here since taking over from his father in law Jean-Jacques Sabon in 2004 and the results are spectacular. The Cuvée Les Olivets, the best value cuvée, contains fruits from vines with a minimum age of 50 years situated in the best sites in Châteauneuf du Pape. Maturation takes place in foudres and used barriques and the finished wine is neither fined nor filtered.
