Mont Rocher is a collection of wines produced from indigenous varieties, produced in a style that lets them clearly express their varietal typicity and sense of place.
Fruit sourced from vineyeards in the Roussillon located near the southern edge of the St Chinian. The grapes are checked throughout August, in order to choose the right day to harvest. Once harvested, the grapes undergo a skin-contact maceration to extract some colour from the skin. Then, the juice, is collected after a delicate pressing and fermented at a low temperature in stainless steel.
