"Bright red colour with blue reflection. The aromas evoke red fruits notes (wild strawberry) followed by menthol, grilled and smoke sensations. The mouth is well-balanced between acidity and structure. The finish is aromatic with fine tannins."
The Villa des Croix range of wines are produced by Daniel Orsolini and Claude Serra who founded their company in 2005. They are a negociant range of wines from the Aude region near Limoux where chalk soils with fragmented marl are present.
They have signed long term contracts with growers and all the wines are vinified by Claude and come from vineyards located on specially selected “terroirs” producing characteristic varietals from the region. When not making wine Claude perfors his duties as Professor of Oenolgy at Montpellier University.
Harvested by hand and de-stemmed prior to a short cold maceration before temperature controlled fermentation in stainless steel at 25°C maximum. Slow extraction by unballasting and punching the cap. After fermentation 80% of the wine is matured in tank and 20% is aged in oak barrels for a minimum of 3 months.
