Château des Tours has a big reputation in France and can be found on some of the best wine lists in Paris. The Château dates from the 14th Century and dominates the land around. The new winemaker, Rémi Jean, has big plans to fulfil the enormous potential of this historic property and has introduced this tiny cuvée of Vieilles Vignes for the 2015 vintage.
The harvest is picked manually by about 100 pickers who are fed and housed on site in the superb Château, making it one of the most sought after picking jobs in Beaujolais! The fruit spends up to 15 days in vat following partial de-stemming of the crop, with the cap undergoing regular punch downs to extract colour and body. Following fermentation the wine is matured in temperature controlled stainless steel and stock is held back after bottling to to allow tannins to soften.
