Tasting Notes

"A serious nose of black fruits with a dark, peppery edge; very smooth and approachable on the palate with good energy, so typical of the 2010 vintage. Very delicious and rich and full, tannins well covered though they show a little on the finish - a little young at present, this is best decanted for 1-2 hours prior to serving.

Vintage Description

Produced from 70% Grenache and 30% Syrah. All of the grapes are harvested manually and sorted by the picker to ensure they arrive intact at the cellar, thus avoiding any form of oxidation. Complete destemming and a long vatting of 21 days allows the wine to acquire supple but ever-present tannins; ageing takes place initially in stainless steel tanks until the first racking, before transfer to new wooden barrels for 3 to 4 months in order to soften the tannins and gently oxygenate the wine. Finally the wine is bottled and kept for at least 6 months before sale.
