El Escocés Volante A.K.A Norrel Robertson MW continues to produce honest and authentic wines from the ‘wild-west’ landscape of Calatayud. Based there since 2003, you only have to see this landscape and small old bush vines to be swept away by the romanticism of a Scotsman working with and against the elements to produce wines with real character.
Careful temperature controlled fermentation and the collaboration of New World trained winemakers and local knowledge has produced a fruit driven wine typical of the Calatayud area. Old concentrated bush vine fruit, hand harvested, crushed and destemmed. Temp controlled alcoholic fermentation to 28 degrees celcius for 7 days with pumpovers and delestage for colour and tannin extraction followed by a short maceration. Pressed off skins using only free run wine followed by full malolactic fermentation. The wine is then cold stabilised and given a fine earth filtration.
