Saint-Bris le Vineux is a little village between Auxerre and Chablis. It is the most important village for wines from the Auxerrois region where wine has been produced since the 12th century. Domaine Grand Roche owned by Erick Lavallée comprises of 22 hectares of family owned vineyards in the Chablis and Auxerrois wine areas. Recently a modern winery was completed and is equipped with the latest technology.
The limestone soils of the Chablis vineyards are really in evidence in the mineral flavours apparent in the great 2010 Chablis from Grand Roche; Vinification takes place in temperature controlled stainless steel tanks and after racking, the wine is matured on its lees without undergoing malolactic fermentation.
